Why nonsense text, rather than real writing

First, real copy hijacks design reviews. Put a draft headline in a mockup and the meeting becomes about the headline. Lorem ipsum keeps attention on the thing actually being reviewed.
Second, lorem ipsum has a word-length and letter-frequency distribution close to English, so it produces realistic-looking line breaks and text density. Repeating 'test test test' does not — it makes the typography look better than it will be, and hides awkward rag and widow lines you would otherwise catch.
When not to use it
Placeholder text hides content problems. If the real heading is 90 characters and your mockup shows 40, the design will break on contact with reality. Before any layout is signed off, test it with the longest and shortest real content it will ever hold.
Never ship it. Lorem ipsum reaching production is common enough to be a recurring news story — search engines index it, and users notice immediately. Search your codebase for 'lorem' before release.
